Where possible the wine was allowed extended time on skins following ferment before being pressed to 225 Litre French oak barrels for maturation

The wine fermented retaining the whole cluster and once pressed is then transferred to neutral barrels for the winter. Once malolactic fermentation is complete, the wine is quickly racked back to tank and bottle to retain the natural Co2 present in the wine to keep it fresh.
