This wine was fermented in open three tonne fermenters and hand plunged to ensure good colour and flavour

Vinified in part with wild yeast and second hand French oak, the wine is pale gold in colour with a green hue and shows lifted perfume and sweet tropical fruits on the nose with a dusting of white pepper. Lemon meringue in a glass, infused with passion fruit and grapefruit then sprinkled with lemon zest.
